Christmas is coming and the proverbial goose has gotten fat! What’s meant to be a magical season, however, can be a source of overwhelm and stress.

For the occasions when you have a surprise visitor, we’ve assembled a list of quick to prepare recipes that will satisfy your guests.

Herbed Baked Brie

Keep your brie in the freezer for a jumpstart on step one, cut off the top rind, bake, and serve as a crudité. This savory cheese is baked with rosemary and thyme and can be topped with your favorite mostarda. (Try making this mostarda ahead).

Wild Rice Salad

Looking for something a bit heartier? This wild rice salad fits the bill while still being seasonal. Along with its grain base, the salad is tossed with cranberries, pomegranates, pecans, feta, and arugula, and green onions. Top with the recipe’s vinaigrette or something you have on hand.

The salad can be kept in the fridge and served moments after your visitors walk through the door.

Spicy Baked Cauliflower with Spicy Lentils

Another make ahead dish, this recipe is also vegan! Cauliflower is baked with chili powder, cumin, and paprika and topped with a lentil salad that has been prepared with garlic, bell pepper, tomatoes, and more. Serve with pomegranate seeds for even more festive flair.
