If you’re looking for inspiration or to mix up your go-to recipes, we’ll be sharing a few of our favorites every week that can be prepared using the ingredients in that week’s basket.

This week’s recipes will work with ingredients included in June 27, 2020’s baskets.

Rootastes’ Chefs’ Curated Recipes

We loved last week’s steak recipe so much that we created another! This week’s Fresh Zen Asian Pesto Marinated Strip Steak is seasoned with spices and Fresh Zen Asian Pesto for a punch. Once marinated, it’s quick to cook and easy to enjoy.

Can’t get enough Fresh Zen Asian Pesto? Try it in Asian Vegetable Medley Sauté that tosses bok choy, broccolini, onion, and mushrooms in the pesto. We recommend serving with your steak!

For a different flavor and a healthy take on ultimate comfort food, bake up the Cauli Coli Casserole. Cauliflower and broccoli star in this dish and meld with the flavors of onion, mushrooms, and piquant Parmesan. Crunchy pita chips make up the topping and pull the dish together.

Chef Favorites

We love salad, but it’s easy to get stuck in the same old salad routine. Toss it up with unique vegetable (and fruit!) pairings using ingredients in this week’s basket.

Corn is a summer staple and we love the charred crunch it gets when grilled. Sprinkle the kernels over romaine lettuce with diced avocado for a juicy, crunchy, lush, and easy to prepare salad! It’s topped with a tangy dressing that calls for lemon juice, maple syrup, white miso paste, mirin, and garlic. Yum!

For an even juicier salad, this Peach Cucumber Salad fits the bill. Sweet peaches shine with refreshing cucumbers and can be topped with goat cheese and pecans for additional flair.
