If you’re looking for inspiration or to mix up your go-to recipes, we’ll be sharing a few of our favorites every week that can be prepared using the ingredients in that week’s basket.

This week’s recipes will work with ingredients included in June 20, 2020’s baskets.

Rootastes’ Chefs’ Curated Recipes

In the mood for steak? Us too! This week’s strip steak grills beautifully in our Grilled Chimichurri Strip Steak & Asparagus with Garlicky Potatoes recipe. We find that the kick of the chimichurri sauce and the crunch of asparagus up levels this rendition of the meat and potatoes pairing.

If you’re trying to eat more vegetables, our Rootastes Summer Roots Roasted Ragout goes all out. The recipe calls for summer squash, tri-color potatoes, carrots, spinach, and an assortment of more than five herbs and spices!

Another vegetable-based side we’re loving this week is the Summer Golden Beet with Honey Crisp Salad that’s crunchy, savory, sweet, and loaded with nutrients. Goat cheese adds a luscious texture while arugula brings a bite. To top it all off is a Lemon White Balsamic Vinaigrette.

Did you know that our bodies absorbs more nutrients from cooked spinach than raw? Give it a try in this easy Spinach Stir-fry with Garlic and Sesame Oil that we think would go great with pasta.

The Red Leaf Salad with Lemon Vinaigrette is another flavorful way to eat your greens. We love the crunchy radishes and zippy dill the recipe calls for, and you can add your own flair by topping with nuts, mandarin oranges, edamame, or whatever else piques your taste buds.
