If you’re looking for inspiration or to mix up your go-to recipes, we’ll be sharing a few of our favorites every week that can be prepared using the ingredients in that week’s basket.

This week’s recipes will work with ingredients included in July 11, 2020’s baskets.

Our local farms are in full bounty, so this week is all about veggies! 

Whether you’re a Brussels sprouts fan or not, you have to give them a try in this rendition of Back to the Roots Medley. They’re roasted to a softer, slightly charred and crunchy consistency with carrots, green beans, and luscious Yukon Gold potatoes.

Whip up these delicious, juicy, and flavorful BBQ Chicken Sliders with Green Bean Fries to satisfy the belly and the mind. This dish will have you dreaming of sunny game days and happy memories! 

Or take a break from the oven with a salad recipe that will have you dreaming about crisper days while the summer sun shines. The Too Early for Autumn Salad that pairs kale and apples with a taste of summer via corn and Brussels sprouts. The walnut baklava adds savory sweetness.

Chef Favorites

One of salad’s favorite partners, soup, is getting a summer makeover! This Sweet Corn Soup recipe is an excellent way to use up that corn you zealously overbought at the farmer’s market (on top of the corn in your Rootastes Farm Fresh Basket ;)). Paired with potatoes, carrots, onion, garlic, and lime juice, the soup is creamy and sweet with a bit of a kick! The added bonus? You can enjoy it hot or cold!

Looking for some crunch on the side? Fries may be a go-to for sandwiches, but we think they’d taste great alongside the sweet corn soup! Before you turn your nose up, hear us out! We’re not talking classic potato fries, we’re talking crunchy Green Bean Fries! Parmesan cheese adds crunch and flavor, and the recipe is keto friendly.
